Mexican Chicken Salad Recipe

Step 1

Toss all ingredients except avocado, lettuce and paprika. When well mixed refrigerate, 30 minutes.

Step 2

Serve on lettuce leaves with avocado wedges. Sprinkle with paprika.

  • 2c Cooked diced chicken
  • 1/4c Sour cream
  • 1/4c Mayonnaise
  • 1/4c Finely chopped carrot
  • 2tb Cilantro
  • 2tb Capers (drained)
  • 2tb Red Bell Pepper -
  • -finely chopped
  • 2tb Lemon juice
  • 1/2ts Ground cumin
  • 1/4c Finely chopped onion
  • 1/4c Tabasco Brand Jalapeno Sauce
  • 1 Avocado, peeled and wedged
  • Lettuce leaves
  • Paprika
