1 green pepper, cut into 1" pieces
1 red pepper, cut into 1" pieces
1 head cauliflower, cut into small florets
1 red onion, cut into 1" chunks
1 pint cherry tomatoes
1 cup of black or green olives (or use both)
3/4 cup Italian dressing
1/4 cup honey
1/4 cup water
In a bowl, combine peppers, cauliflower, onion, tomatoes and olives. In a small bowl mix the Italian dressing, honey and water. Pour this over the vegetables and toss to coat everything. Cover and chill for at least 2 hours but best if done overnight. Serve chilled.
