Savory Beef Burgers
Total preparation and cooking time: 25 minutes
1 pound ground beef
2 tablespoons minced yellow onion
1 tablespoon Dijon-style mustard
3/4 teaspoon dried Italian seasoning, crushed
1/4 teaspoon salt
1/4 teaspoon ground cumin
1/4 teaspoon cracked black pepper
8 to 12 Bibb lettuce leaves
8 tomato slices (1/4-inch thick)
8 thin red onion rings
Combine ground beef, minced onion, mustard, Italian seasoning, salt, cumin and pepper in large bowl, mixing lightly but thoroughly. Lightly shape into four 1/2-inch thick patties.
Place patties on rack in broiler pan so surface of beef is 3 to 4 inches from heat. Broil 10 to 12 minutes to medium (160°F) doneness, until not pink in center and juices show no pink color, turning once.
Layer lettuce, tomato and onion rings evenly on four plates. Top each with one burger.
Makes 4 servings.
Grill Directions: Place patties on grid over medium, ash-covered coals. Grill, uncovered, 11 to 13 minutes to medium (160°F) doneness, until not pink in center and juices show no pink color, turning occasionally.
