Lentil & Tomato Soup Recipe

Step 1

Heat the oil in a soup pot & saute the onions, garlic & rosemary for 5 minutes. Add the stock, lentils, carrot, celery, tomatoes & seaweed.

Step 2

Bring to a boil, reduce heat, cover & simmer for 20 minutes. Blend the contents till smooth with the miso, cumin & salt. Reheat & serve hot.

Things You'll Need

  • 3tb Vegetable oil
  • 2lg Onions, chopped
  • 1sm Garlic clove, crushed
  • 1ts Rosemary
  • 1 3/4c Stock
  • 8oz Lentils, cooked
  • 1lg Carrot, diced
  • 1ea Celery stick, chopped
  • 14oz Canned tomatoes, chopped
  • 1pn Arame seaweed
  • 1ts Miso
  • 1/2ts Cumin
  • Salt, to taste
