How to Make Raw Food Lasagna

Overview

A raw food diet is a plant-based diet that promotes uncooked and unprocessed foods, such as organic fruits, vegetables and nuts. Raw food lasagna made from fresh Italian herbs, vegetables, nuts and prepared without heat, is a delicious and nutritious meal that can be eaten for lunch or dinner.

Step 1

Make the nut cheese by processing all ingredients in food processor with S blade. Add water as needed until the mixture is creamy. Place the nut cheese in medium size bowl.

Step 2

Add walnut meat ingredients to food processor and grind until mixture is slightly chunky. Place in a separate medium size bowl.

Step 3

Add tomato sauce ingredients to food processor and process until smooth. Place in a separate medium size bowl.

Step 4

Place spinach in a bowl and marinate in olive oil, oregano and salt for 1 hour.

Step 5

Cut zucchini lengthwise and marinate for 15 minutes in sea salt and olive oil. Add a pinch of black pepper

Step 6

Place a layer of zucchini flat in lasagna dish. Add a layer of the walnut meat, nut cheese, and then tomato sauce. Add spinach on top of tomato sauce. Start again with a layer of zucchini which should slightly overlap. Repeat the process, adding walnut meat, then nut cheese, then tomato sauce.

Step 7

Refrigerate dish for 3 hours or until firm. Serve at room temperature or place in dehydrator for 30 minutes to 1 hour.

  • Food processor
  • 4 medium bowls
  • Spatula
  • Medium lasagna dish (33 x 27cm)
  • Nut Cheese
  • 2 cups macadamias
  • 1 cup pine nuts
  • 2 tbsp. nutritional yeast
  • 2 organic yellow peppers
  • 2 tbsp. fresh parsley
  • 2 tbsp. lemon juice
  • 1 tbsp. fresh thyme
  • Pinch salt (sea salt)
  • 1/2 cup of water (as needed)
  • Walnut Meat
  • 1 1/2 cup walnuts
  • 1 cup sun-dried tomatoes
  • 1 tbsp. miso
  • 1 tbsp. nama shoyu
  • 2 tbsp. dried oregano
  • 2 tbsp. dried sage
  • 1/2 tsp. cayenne pepper
  • 2 tbsp. olive oil
  • 1 tbsp. agave nectar
  • Tomato Sauce
  • 1 1/2 cup sun-dried tomatoes (soaked for 20 minutes in 1 cup water)
  • 2 dates
  • 2 cloves garlic
  • 1 1/2 tbsp. dried oregano
  • 1/3 cup olive oil
  • 2 cups organic tomato (chopped and seeded)
  • 2 tbsp. lemon juice
  • Spinach Layer
  • 5 cups organic spinach
  • 3 tbsp. olive oil
  • 5 tbsp. dried oregano
  • Pinch of sea salt
  • 5 medium zucchini
  • 1 tbsp. of salt (sea salt)
  • 3 tbsp. olive oil
