Mushroom Florentine

 

1 garlic clove, chopped
1/2 cup margarine
1 lb. mushrooms, sliced
3 pkg. frozen chopped spinach, thawed
1 onion, chopped
salt and pepper to taste
1 cup cheddar cheese, shredded

Sauté garlic in a 1/4 cup margarine. Remove the garlic and sauté the mushrooms. Combine spinach, onion and remaining margarine. Add salt and pepper to taste. place in a baking dish and sprinkle with half the cheese. Cover with the mushrooms and add remaining cheese. Bake at 350 degrees for 30 minutes.
