Onion Wine Soup (Mrs. Ronald W. Reagan Recipe

Overview

An all time favorite. Try this onion soup having sliced potatoes, celery leaves, onions and wine.

Step 1

Melt butter in large saucepan. Add chopped onion and mix well. Add beef broth, celery leaves and potato. Bring to boil then cover and simmer for 30 minutes. Puree mixture in blender. Return to saucepan and blend in wine, vinegar and sugar. Bring to a boil and simmer 5 minutes. Stir in cream, parsley and salt and pepper to taste. Heat thoroughly, but do not boil.

  • 1 1/4 cup butter
  • 1 5 large onions, chopped
  • 1 5 cups beef broth
  • 1 1/2 cup celery leaves
  • 1 1 large potato, sliced
  • 1 1 cup dry white wine
  • 1 1 tsp. vinegar
  • 1 2 tsp. sugar
  • 1 1 cup light cream
  • 1 1 T. parsley, minced
  • 1 salt & pepper
