Carrot Salad: Ladies Lunch Recipe

Step 1

Mix together the oil, vinegar, sugar, dry mustard, and tomato sauce. Add the carrots, green pepper, and onion. Season to taste with salt and pepper. Chill. May be made ahead several days. Yield: 6 servings

  • 2c Vegetable oil
  • 2c Red wine vinegar
  • 1c Sugar
  • 1ts Dry mustard
  • 8oz Tomato sauce -- canned
  • 1lb Baby carrots -- julienned and cooked
  • 1lg Green bell pepper -- sliced
  • 1md Onion -- sliced
  • Salt and freshly ground black pepper
