A Vegan alternative to Pate

Step 1

Prepare chestnuts by cutting an X on the flat side with a sharp knife, then roasting in a 400 degree oven for 15 minutes.

Step 2

Shell the nuts and chop coarsely.

Step 3

Measure out 1 1/2 cups then put them in a blender or food processor and grind them to a fine powder or paste.

Step 4

Mix all ingredients in a bowl, then transfer to a loaf pan.

Step 5

Sprinkle with cayenne and bake at 350 degrees for an hour.

Step 6

Cool completely, unmold, slice thin a serve with french bread or crackers.

Things You'll Need

  • 1 1/2cups ground chestnuts
  • 1/2cup whole wheat flour
  • 1/2cup nutritional yeast
  • 4Tbls lemon juice
  • 1 grated raw potato
  • 4 stalks green onion/scallions, thinly sliced
  • 2 stalks grated celery
  • 1 grated carrot
  • 1Tbls soy sauce/tamari
  • 1tsp each of basil, thyme, and sage
  • 1Tbls fresh or 1 tsp dried rosemary
  • 1 1/2cups warm water
  • 1 Sprinkles of cayenne
