Roasted Onion or Garlic Vinaigrette Recipe

Overview

Try this with a Head of Garlic.

Step 1

In an ovenproof pan with a lid, combine the onion with 2 Tbs. olive oil and the Creole seasoning.

Step 2

Cover and bake in a 225 degree oven for two hours. Cool to room temperature.

Step 3

Add remaining olive oil, vinegar, salt, and pepper to taste. Stir

Step 4

well. This dressing can be stored, refrigerated and covered, for two weeks.

Things You'll Need

  • 1 1/2 medium yellow onion, diced
  • 1 3/4 cup olive oil
  • 1 1/2 tsp. Creole seasoning
  • 1 1/4 cup red wine vinegar
  • 1 Pinch salt
