I'd like to take a second to introduce you to some of my friends. These are some of the squashes that completely transformed my understanding of squash itself. Like most people I was raised on the typical acorn squash, this one imported from Honduras, it's o'kay, it's probably even sweet but compared to these, it's insipid so let's put this one aside and I'll introduce you. This is a beautiful specimen that comes from the Kyoto region of Japan and they call it Shishigatani Tunesmekino, it has two names and not only is this revered in the Japanese culture it allegedly prevents paralysis. I can't say for sure but that is what they say. The flesh of this specimen is so beautiful and so dense you can make a pie practically using no sweetener at all. Next I'd like to show you believe it or not a zucchini. It doesn't look like a zucchini because unlike a typical zucchini this one when overgrown transforms itself into a beautiful winter squash. Its name is Zuchino Rampikanta an Italian heirloom.
