There is a reason superb gourmet salads usually contain escarole - it adds flavor, texture, and visual appeal. Blanching gives escaroles and endives a creamy texture and color. Instructions for blanching are included in the packet. Grosse Bouclee is fairly heat tolerant. An essential part of any mesclun mix.

When to Sow Outside: The key to success with escarole is to have it mature in cool or warm weather, but not in hot weather. Sow in very early spring, 4 - 6 weeks before the last frost. You can also sow in summer, 1 - 12 weeks before the first fall frost. Escarole will withstand a light frost. In warm climates, sow in fall for winter harvest.
When to Sow Inside: This is highly recommended to get an early start for spring crops. Sow 10 - 12 weeks before the last frost and transplant outside in 5 - 6 weeks.
