The elegant burgundy plumes grow atop striking foliage that turns reddish-burgundy in the fall. Excellent for the back of the border; combines well with yellow sunflowers.
The beige seeds are very high in protein and other nutrients. Cook them like rice for a side dish, or pop like popcorn. Very young leaves are good in salads or steamed.
