them a lot of added flavor with little effort. While
these recipes were created in the National Potato Board's
test kitchen to complement your Thanksgiving turkey,
they can be served year-round with poultry, pork or
beef.
Parmesan
Garlic Mashed Potatoes:
Combine 1 cup grated Parmesan cheese, 1 tablespoon finely
chopped fresh garlic and a squeeze of fresh lemon juice,
and stir into 6 cups hot mashed potatoes (8 to 12 servings).
Sage
Butter Mashed Potatoes:
Melt 1/2 cup butter in a small saucepan. Add 2 tablespoons
finely chopped fresh sage, 2 teaspoons finely chopped
fresh garlic and a pinch of nutmeg. Cook for about a
minute and stir into 6 cups hot mashed potatoes (8 to
12 servings).
Wild
Mushroom & Sherry Mashed Potatoes:
Melt 1/4 cup butter in a large skillet. Add 2 cups finely
chopped shiitake or portobello mushrooms, 2 teaspoons
finely chopped fresh garlic and a pinch of dried savory
or tarragon. Cook 3 to 4 minutes and add 1 tablespoon
dry sherry. Cook for another 1 to 2 minutes and stir
into 6 cups hot mashed potatoes (8 to 12 servings).
Tip: For added convenience, use refrigerated, frozen or dehydrated mashed potatoes. Prepare mashed potatoes as package directs and add stir-in of choice.
