Sweet Onion Tart

tbl. olive oil
1 pkg. onions, peeled and thinly sliced
4 cloves garlic, sliced
1/2 cup sugar
2 tbl. balsamic vinegar
1 sheet rich shortcrust pastry
1/2 cup tomato paste
salt and pepper to taste
1/3 cup black olives
Heat the oil in a large heavy saucepan and sauté the onions and garlic over a low heat for 5 minutes, or until soft but not colored, stirring occasionally. Stir in the sugar and simmer for 10 minutes. Add the vinegar and cook uncovered until the onion reaches the consistency of a jam. Place the sheet of pastry on a baking tray lined with baking paper. Spoon the tomato paste on top and season with salt and pepper. Spread the onion mixture evenly over the pastry, leaving a 1/2" edge. Scatter the olives over the top. Brush lightly with olive oil and bake in a 400 degree for about 25 minutes, or until the crust is golden. This dish may be served hot or cold.
