Fay's Lentil Soup
Lentils symbolize good luck in the new year.
1
lb bag of dried lentils
2 strips of bacon cut in bite size pieces crosswise
1 large potato, cubed
1 medium sized onion, chopped
2 cloves of garlic crushed
cracked pepper to taste
salt to taste
Place lentils in a heavy pan, preferably a cast iron one. If you don't have a cast iron pan use a Dutch oven. Fill to about 1 1/2 to 2 inches from the top with water. Place all the other ingredients in the pan and stir. Cook to boil and then simmer until the lentils are not crunchy, but not falling apart. Make sure the potatoes don't break down. The potatoes and the lentils will be done at the same time. Keep sufficient liquid for a soup otherwise it will turn into a paste. Serve immediately with a pat of butter on top of each bowl full. Serve with crusty French bread. Serves 4.
