Salad Burnet & Cream Chese Sandwich

Salad burnet is a perennial herb with leaves that taste very much like cucumber. This happy coincidence gives these sandwiches the flavor of classic tea-time cucumber sandwiches without the tendency to wilt and get mushy.
2 slices
whole grain bread
2-3 ounces (55-85 g) cream cheese
16 fresh salad burnet leaves
butter, to taste
Lightly butter one side of each slice of bread. Spread the cream cheese over one slice. Sprinkle the salad burnet leaves evenly over the cream cheese. Cover with the second slice and enjoy. If you are serving this at a tea party, slice off the bread crusts before making the sandwich. After the sandwich is assembled, cut into decorative triangles to make "finger sandwiches."
