Ginger Shrimp

 

1 cup low-fat italian dressing
1/2 cup sherry
4 shallots, peeled and halved or use 1/3 onion, diced
3 green onions, sliced
1 2-inch piece fresh ginger, peeled and cut 1 tsp. ground ginger
1 tsp. soy sauce
1 tsp. lemon juice
1 lb. large shrimp, cleaned but keep tails on

In a blender or food processor, puree all the ingredients except for the shrimp. In a baking dish, add the shrimp and then the dressing. Cover and marinate for at least 3 hours in the refrigerator. Broil shrimp with the marinade turning once for 10 minutes or until done. Serve shrimp with the marinade.
