New West Crab Cakes
1 lb.
crabmeat or imitation crabmeat
3/4 lb. mashed potatoes (instant may be used)
1/3 cup chopped red onions or chives
1 egg yolk
1/2 cup walnuts, chopped
2 egg whites
1 cup bread crumbs
Pinch of Salt
Procedures:
Combine crabmeat, egg whites, egg yolk, potatoes, onions, seasoning,
1/4 cup chopped walnuts and 1/2 cup bread crumbs in a bowl. Form mixture
into 8 flat patties. Mix together remaining 1/2 bread crumbs and finely
chopped walnuts. Coat crab patties with bread crumb mixture. Cook over
medium heat in skillet with brushed oil. Serve with lemon wedges or
fresh tomato relish made with chopped green and yellow peppers, red
onion and diced, seeded tomatoes, seasoned to taste. May substitute
already prepared salsa.
