Lemony Roasted Chicken

1 3-4 pound whole
chicken
1/2 cup chopped onion
2 tbsp butter
juice of 1 lemon
1 tbsp fresh parsley (or 1/2 tbsp dried)
2 tsp grated lemon peel (zest the lemon before you juice it)
1/4 tsp salt
1/4 sp dried thyme leaves (I used fresh-mmm!)

Rinse the chicken and pat dry with paper towels. Remove and discard
any excess fat.
2. Place onion in chicken cavity and rub skin with butter.
3. Place chicken in slow cooker. Squeeze lemon juice all over chicken. Sprinkle with grated lemon peel (I use a zester, much easier!), parsley, salt, and thyme.

Cover and cook on low 6-8 hours.
I've posted the rolls in another post- for some reason I haven't been able to post them together tonight!
This thyme was wonderful- it's called "Golden Thyme" and tastes
very lemony- perfect for this dish!
