Chicken Cacciatore

 

1/3 cup flour
1/4 tsp. pepper
2-3 lbs. chicken (I use breasts). cut into strips
or
3" pieces
1/4 cup oil
1 cup sliced mushrooms
1 onion, chopped
1 green pepper, chopped
1/4 cup water
1/4 cup sliced black olives
1 tsp. salt
1 tsp. oregano
1/4 tsp. pepper
1 (16oz) can whole tomatoes, drained
1 (8oz) can tomato sauce
2 cloves garlic, minced
1 bay leaf
1/4 cup cooking sherry (Optional)
pasta (or rice)

Mix flour and 1/4 tsp. pepper. Coat chicken with flour. Heat oil in a large skillet or dutch oven. Cook chicken over medium heat until brown. Drain fat. Mix in the remaining ingredients except pasta. Break up tomatoes. Heat to boiling, then lower heat, cover and simmer for 40 - 45 minutes. Remove bay leaf. Serve over pasta (or rice.)
