Window's Chocolate Cherry Pate
- 1-1/4 cups fresh Michigan sweet cherries
- 8 ounces plus 2 tablespoons semisweet chocolate, chopped
- 3/4 cup granulated sugar
- 3/4 cup cold coffee
- 6 ounces (2/3 cup) butter
- 5 eggs, beaten
Rinse
and pit cherries; set aside.
Put chopped chocolate in a large bowl. Combine sugar and coffee in
a medium saucepan. Bring to a boil over high heat; cook, stirring,
until sugar is dissolved. Remove from heat. Immediately pour sugar
mixture over chocolate. Beat in butter; fold in eggs and cherries.
Pour mixture into a 6-cup loaf pan. Place pan in bain marie or water
bath which reaches halfway up sides of pan.
Bake in a preheated 350-degree oven 1 hour, or until pate is set.
Remove from water bath, and let cool. Loosen from pan, and serve in
slices garnished with whipped cream.
