Chives are a tasty addition to any vegetable garden. And, this perennial vegetable is a great plant for beginning gardeners. They are easy to care for, cannot be killed by freezing temperatures and will suffer through even the most neglectful gardener. When they reach maturity, they will continue to grow as long as the weather is warm. Harvesting them is as simple as snipping the desired amount from the growing plant with a pair of gardening scissors.
Prepare the soil. Mix aged organic compost with your garden's soil if it is not already amended to suit other vegetables. Chives aren't picky plants and they will grow nearly anywhere. However, they prefer a spot that has access to direct sunlight for most of the day and soil that is neither too wet nor too dry.
Plant the chive seeds. This should be done in early spring in colder climates. In warmer ones, they can be planted in fall or even winter.
The seeds should be planted 1/2 inch deep in clusters that are 18 inches apart. Cover the chive seeds lightly.
Keep the chives well watered until they sprout in about 14 to 28 days.
