Harvest after six months (Mexican varieties) or 12 months (Guatemalan). Ripe avocados are glossy green to black. Gently pull to remove from the tree. Store Guatemalan varieties at 50 degrees Fahrenheit. Eat Mexican avocado varieties immediately.
