We chose the big-seeded Mache variety because it handles spring/summer heat without getting bitter. This old garden green is great for northern or southern gardens. Use mild-flavored mache to contrast sharper greens in salads, cook it like spinach, or use it in fruit and vegetable dishes. Makes a nice salad by itself when dressed with a peanut oil based dressing or a light vinaigrette.

When to Sow Outside:
Cold Climates: Plant in early spring as soon as the ground is workable for early summer harvest, or late summer for fall harvest, or late fall for spring harvest.
Mild Winter Climates: Plant in fall for winter harvest.
When to Sow Inside: 4-6 weeks before transplanting outside.
