When gourds are harvested when they are between 4" and 6" long, they are sweet, tasty vegetables that can be stirfired, sautéed, or cooked with meats just as you would zucchini squash or okra. It can also be sliced into a salad like cucumber. Mature seeds can be roasted for a snack and young flowers and foliage can be cooked as a green.

When to Sow Outside: 2 to 3 weeks after last frost. Soil temperature should be at least 65 degrees and outside temperature should be at least 60 degrees.
When to Sow Inside: Not recommended, but in short season climates, they can be started 4 to 6 weeks before last frost.
Seed Depth: 1/2" - soak them overnight first
Seed Spacing: 6"
Row Spacing: Plant against a fence or trellis.
