Tomatoes and Okra


1 1/2 C. okra, cut in 1/2 inch slices
1/2 C. chopped onion
1/2 C. chopped green pepper
2 Tbsp. salad oil
1 Tbsp. sugar
1 Tsp. flour
3/4 Tsp. salt
1/4 Tsp. pepper
3 tomatoes -- peeled and quartered


Cook okra, covered, in small amount of boiling salted water 10 minutes; drain. Cook onion and green pepper in salad oil until tender, but not brown. Blend in sugar, flour and seasonings. Add okra and tomatoes; cook over low heat until vegetables are hot through, stirring as little as possible. Makes 4 servings. (Can use one 10 ounce package frozen okra. Cook according to package directions. One cup of canned tomatoes may be used in place of fresh tomatoes.)
