Baked Roma Tomatoes with Fresh Basil

One of the judges was especially impressed with this simple yet elegant presentation. She said: "It's spectacular. One bite of this tomato-basil combination takes you straight to Italy. YIELD: 2 SERVINGS
PREPERATION TIME: 5 MINUTES
COOKING TIME: 15 MINUTES
2 medium Roma tomatoes
1 teaspoon extra-virgin olive oil
1 tablespoon chopped fresh basil
Preheat oven to 350 degrees.
1. Cut tomatoes in half lengthwise. Place cut side up on baking pan.
2. Drizzle with olive oil; sprinkle with salt and pepper.
3. Bake in preheated oven for 10 to 15 minutes.
4. Remove from oven, sprinkle with basil.
