4 garlic cloves, minced
1 zucchini, cut into 1/4" slices
3.4 cup fresh basil leaves, chopped
1/4 cup fresh parsley, chopped
1/2 cup ice water
2 tsp. lemon juice
Preheat oven to 425 degrees F. Wrap zucchini and garlic in foil and place on a baking sheet. Roast in middle of oven about 15 minutes. Unwrap and cool. Blanch basil and parsley 10 seconds and drain. Drop in ice water. Using a blender or cuisinart, blend together. Per serving:
