Linguini with Salsa Rustica & Walnuts


Pan spray or oil for sauteeing
8 ounces fresh mushrooms, sliced
2 cups onions, diced
1 cup carrots, shredded
1 cup green bell pepper, diced
4 cloves garlic, finely minced
1/4 cup dry red wine or water
1/2 cup tomato juice
4 cups ripe tomatoes, peeled and cubed
1/2 cup fresh (or 4 teaspoons dried) basil or oregano leaves, chopped
Salt and pepper to taste
1/4 cup walnuts
2 ounces Romano cheese, grated
1/4 cup parsley, chopped
3 cups tender-cooked linguini


Pan spray or wipe lightly with oil a large non stick skillet and sauteed onion on medium high until translucent.

Stir in mushrooms, carrots, peppers, garlic, and wine. Cook over high heat until wine evaporates, stirring occasionally.

Add tomato juice, tomatoes, basil, salt and pepper; simmer until most of liquid reduces.

In a large bowl, toss linguini with sauce. Sprinkle with walnuts, cheese and parsley, if desired.

Makes 12 cups.
