Breaded Turkey a la Genovese

Servings: 6

1 Cup fine dry bread crumbs
1/4 Teaspoon salt
1/4 Teaspoon dried oregano
1/8 Teaspoon freshly ground black pepper
6 Slices cooked turkey breast, cut 1/3-inch thick
2 eggs slightly beaten
2-3 Tablespoons vegetable oil
1 14-Ounce Can spaghetti sauce
1/2 Pound Mozzarella cheese, sliced
1/2 Cup green peppe,r seeded and finely chopped
1/2 Cup fresh button mushroom,s cleaned and finely chopped


Preheat the oven to 350 degrees F

In a shallow pie plate, combine bread crumbs, salt, pepper and oregano. Dip turkey slices in egg, then dredge in seasoned crumbs.

Heat oil in saute pan and brown turkey slices on both sides until lightly crisp.
Transfer to a 13x9-inch baking dish. Cover turkey slices with spaghetti sauce, top each piece with Mozzarella and sprinkle with green pepper and mushrooms.

Bake, uncovered, until sauce bubbles and cheese melts, about 20 minutes.
