Chicken in Packets

 

4 chicken breasts, boned, skinned and split
1/2 tsp. salt 1/8 tsp. white pepper
1/4 cup lightly salted butter
1/4 cup minced shallots
1/2 cup mushrooms, chopped
1/2 cup dry white wine
1 cup brown sauce (below)
1/4 cup dice cooked ham
1 tsp. tarragon rice

Preheat oven to 400 degrees. Flatten chicken with a mallet to 1/2 fillets. Season with salt and pepper. Heat butter in a skillet. Sauté chicken for 2 minutes on each side. Transfer each piece of chicken to a greased 6 x 8 piece of foil. Sauté shallots in the pan drippings until coated. Add mushrooms and cook for 5 minutes. Stir in the wine, ham, tarragon and brown sauce (see recipe below). Heat thoroughly. Ladle about 1/4 cup of sauce over each piece of chicken. Close packets up tightly. Place them on a baking sheets and bake 15 minutes. Open packets and serve on a bed of rice. Each packet has sauce in it.

Brown Sauce

2 tbs. butter
2 tbs. flour
1 cup beef stock
1/8 tsp. dry mustard

Melt butter over medium heat and add flour. Gradually add stock. Simmer until thickened. Add mustard, simmer 5 minutes.
