Cranberry Salad Recipe

Step 1

Mix cranberries, sugar and pineapple and let stand 2 hours. Dissolve gelatin in boiling water. Cool, then add to fruit mixture and pour into 13"x9" pan and let set. Combine topping ingredients in saucepan. Mix and cook until thick. Cool until cold. Blend in whipped topping. Spread over salad.

  • 2 bags (12 ounces each) cranberries, ground
  • 1 1/2 cups sugar
  • 20 ounce can crushed pineapple, drained reserving juice
  • 2 packages cranberry (or strawberry) gelatin
  • 2 cups boiling water
  • Topping:
  • 2 cups pineapple juice
  • 4 tablespoons flour
  • 1 cup sugar
  • 2 eggs
  • 4 tablespoons margarine
  • 18 ounces frozen whipped topping, thawed
