Pai Gwat Shu Mai (Steamed Spare Ribs In Black Bean Sauce) Recipe

Have butcher trim enough spare ribs so that you will have 2.5 lbs. net.

Step 1

Cut spare ribs into 1 or 2 inch cubes.

Step 2

Wash fermented black beans before adding to marinade.

Step 3

Add cubed spare ribs to marinade, mix thoroughly, and refrigerate overnight in heatproof dish.

Step 4

Put 3 cups of water in wok and bring to a boil. Put the marinade and spare ribs in steamer and place on wok.

Step 5

Steam for 30 minutes.

1 Marinade:
  • 2ts Salt
  • 2tb Sugar
  • 1tb Sherry
  • 2tb Oyster Sauce
  • 2tb Fermented black beans *
  • 4tb Tapioca flour *
  • 1ts Sesame oil
  • 2ts Minced garlic
  • 3/4ts Baking soda
  • 1/2ts Hot pepper flakes
  • 1pn White pepper
  • 2tb Diced red bell pepper
