Spicy Tofu Salad Recipe

Step 1

Cut the tofu into cubes. Drain in a colander.

Step 2

Put the lettuce on the bottom of a shallow bowl or attractive serving dish. Place the tofu in the centre & surround it with one mound each of cucumber, carrot, mushrooms & peanuts. Refrigerate until chilled.

Step 3

Combine the TOPPING ingredients in a blender or food processor & whip into a rough mixture.

Step 4

Blend together the dressing ingredients.

Step 5

At serving time, sprinkle the topping mixture over the salad then pour on the dressing. Toss at the table.

Things You'll Need

  • 1 1/2lb Tofu
  • 1c Cucumber, julienned
  • 1c Carrot, julienned
  • 1c Mushrooms, sliced
  • 1sm Iceberg lettuce
  • 1/2lb Lima beans, lightly cooked
  • 1/3c Peanuts, chopped
  • 2ea Green onions, chopped
  • 5ea Red & green chilies, chopped
  • 1 1/2tb Chili sauce, see recipe
  • 3tb Soy sauce
  • 2ts Sugar
  • 1/2c Rice vinegar
  • 1/2c Tofu
