Chick Pea & Basmati Rice Salad Recipe

Step 1

Toss together chick peas, rice, bell peppers, scallions in a large bowl. Whisk together all the ingredients for the vinaigrette. Toss with salad & season to taste.

  • 3/4c Cooked chick peas
  • 1c Cooked basmati rice
  • 1/2ea Red bell pepper, diced
  • 1/2ea Green bell pepper, diced
  • 1/2ea Yellow bell pepper, diced
  • 4ea Scallions, sliced
  • Salt to taste
  • 2ts Toasted sesame seeds
  • 1ts Sesame oil
  • 1/4ts Cumin
  • 2tb Lemon juice
  • 1tb Olive oil
  • 1ts Salt
