Black Bean and Rice Salad (Thomas) Recipe

Step 1

Mix the beans, rice, and cilantro together in a bowl. Place the lime juice in a small bowl and whisk in the oil. Add the onion and garlic and toss with the rice and beans. Add salt and pepper to taste.

  • 2c Cooked or canned black beans

  • 2c Cooked rice
  • 1 1/2c Fresh cilantro
  • 1/4c Lime juice
  • 3/4c Oil
  • 1/2c Chopped onion
  • 2 Garlic cloves; crushed
  • Salt
  • Freshly ground black pepper
