Black Bean & Rice Salad Recipe

Step 1

Combine rice, beans, tomato, cheese (if desired), and parsley in large bowl. Pour dressing and lime juice over rice mixture; toss. Serve on lettuce leaves.

  • 2c Cooked rice
  • - cooled to room temperature
  • 1c Cooked black beans
  • 1c Chopped fresh tomato
  • 2oz Cheddar cheese (optional)
  • -- shredded
  • 1tb Snipped fresh parsley
  • 1/4c Light Italian dressing
  • 1tb Fresh lime juice
  • Lettuce leaves
