Beet Pickles Recipe

Step 1

Wash Beets and leave a 1" stem.

Step 2

Cook with a little salt until tender.

Step 3

Drop in cold water to slip off skins.

Step 4

Slice or cube.

Step 5

Bring syrup to a good boil, add beets and boil again. Pack in sterile jars with syrup and seal immediately.

  • 2c Sugar
  • 2c Water
  • 2c Cider vinegar
  • 1ea Thinly sliced lemon
  • 1ts Cinnamon
  • 1ts Cloves
  • 1ts Allspice
