Ro*Tel Cornbread Recipe

Mix all ingredients together. Bake at 425 degrees for 25 to 30 minutes.

  • 3/4c Yellow Cornmeal
  • 3tb Flour
  • 1/4ts Soda
  • 1 1/2ts Baking Powder
  • 1ts Salt
  • 2tb Vegetable Shortening; melted
  • 1c Buttermilk
  • 1 Egg; beaten
  • 1 Jalapeno; finely chopped
  • 10oz RO*TEL Tomatoe w/Green Chili
