Dry Potatoes (Sookha Aloo) Recipe

Step 1

Boil potatoes until cooked but not overdone.

Step 2

Peel and cut into 1/2" cubes.

Step 3

Heat oil very hot, add and brown cumin seeds.

Step 4

Add potatoes and fry until they are golden brown. Add the remaining ingredients and fry for 2-3 minutes. more. Remove from oil with a slotted spoon.

Step 5

Serve hot.

Tips: Use enough oil that the potatoes will not need to be stirred often, and thus avoid breaking them up.

  • 4md Size potatoes
  • 2ts Cumin seeds
  • 1ts Salt
  • 2ts Mango powder
  • 1/4ts Hot pepper
  • 2ts Garam Masala
  • Oil (to fill pan to 2")
