Stuffed Peppers/Jambalaya Recipe

Step 1

Heat oil. Add sausage, veggies and bay leaf. Cook 5 minutes. Add file, green onions, parsley and tomatoes. Simmer 20 minutes. Add remaining ingredients and mix well. Put mix into bell peppers. Top with crumbs. Drizzle oil on top. Bake at 400 for 20 to 25 minutes. Can be served with a tomato sauce on top.

(NOTE-This seems like it would make a lot more stuffing than for 3 peppers)

  • 3lg Bell peppers; halved
  • 4tb Oil
  • 10oz Smoked sausage
  • 2md Onions; diced
  • 2 Bell peppers; diced
  • 4 Ribs celery; diced
  • 2 Bay leaves
  • 3cl Garlic; minced
  • 2tb File gumbo powder
  • 1/2c Green onions; sliced
  • 1/4c Chopped parsley
  • 1cn Tomato sauce; 8oz
  • 1cn Crushed tomatoes; #2-1/2
  • 8oz Fresh crab meat
  • 1lb Cooked crawfish tails
  • 3 1/2c Cooked rice
  • 4ds Tabasco
  • 4ds Worcestershire sauce
  • Salt and pepper
  • Olive oil
  • Bread crumbs
