Eggplant Steak Recipe

Step 1

Lightly rub all the vegetables with olive oil and salt & pepper.

Step 2

Grill all the vegetables for 3-4 minutes on each side untill soft, or place on a baking sheet and roast for 10-12 minutes, allow to cool.

Step 3

(Assemble from the bottom)

Step 4

1 mushroom cap - 2 slices potato - 2 slices green zucchini - 1 disc red pepper - 1 slice red onion - 1 slice tomato - 1 slice yellow zucchini - 1 disc yellow pepper - 1 slice egg plant.

Step 5

Put the rosemary sprig through the center of the stack, making sure 1in sticks out the top.

Step 6

Garnish with chopped herbs.

Things You'll Need

  • 1 1 Large eggplant, sliced 1/3in thick
  • 1 1 Large green zucchini sliced 1/3in thick
  • 1 1 Large yellow zucchini sliced 1/3in thick
  • 1 2 Large red bell peppers, cut into discs
  • 1 2 Large yellow bell peppers, cut into discs
  • 1 4 hot house tomatoes, sliced 1/3in thick
  • 1 2 Large red potatoes, sliced 1/3in thick
  • 1 2 medium red onions, sliced 1/3in thick
  • 1 6 portabello mushrooms caps, stems removed
  • 1 6 fresh rosemary sprigs
  • 1 Fresh thyme and basil finely chopped
  • 1 olive oil
  • 1 Salt & Pepper to taste
