Martha's Banana Bread Recipe

Overview

Banana bread is a sweet, cakelike bread which contains mashed bananas. Banana bread is a quick bread which typically uses baking soda as the leavening agent instead of yeast. Serve it with Cream tea or you can have it just like that.

Step 1

Preheat oven to 350°.

Step 2

In bowl, combine margarine or oil with sugar – beat well.

Step 3

Add eggs one at a time, beating well after each addition.

Step 4

Beat in vanilla, bananas, and orange rind (if using).

Step 5

Mix together flour, baking powder, baking soda, and choco chips (if using).

Step 6

Beat into egg mixture, alternating with milk or yogurt. Pour into buttered pan.

Step 7

Bake in oven for 40 minutes or until tester (toothpick) inserted in centre comes out clean.

Step 8

Let cool in pan for 10 minutes.

Step 9

Remove from pan and let cool on rack.

  • 1 ½ cup vegetable oil
  • 1 ¾ cup sugar
  • 1 2 eggs
  • 1 1 tsp vanilla
  • 1 1 cup mashed ripe bananas (about 3)
  • 1 1 tsp grated orange rind (optional)
  • 1 2 cups flour
  • 1 2 tsp baking powder
  • 1 ½ cup buttermilk or yogurt
  • 1 ½ cup choco chops (optional)
