Apricot Gelatin Salad Recipe

Step 1

In a bowl, dissolve gelatin in boiling water. Drain pineapple; reserve juice. Add pineapple to gelatin and set aside.

Step 2

In a mixing bowl, beat cream cheese and gradually beat in pineapple juice until smooth. Stir in gelatin mixture; chill until partially set., stirring occasionally. Stir in apricots and walnuts. Fold in whipped topping. Pour into a 13"x9" dish. Sprinkle with additional nuts if desired. Chill until firm.

  • 6ounce package apricot gelatin
  • 2cups boiling water
  • 20ounce can crushed pineapple
  • 8ounce package cream cheese, softened
  • 15ounce can apricot halves, drained and chopped
  • 1/2cup chopped walnuts
  • 8ounce container frozen whipped topping, thawed
  • additional chopped walnuts
