Tofu Anti-Pasto Recipe

Step 1

Combine the vegetables & tofu in a large mixing or salad bowl. Add the rest of the ingredients & mix gently to combine. Marinate at room temperature for 30 minutes. Check the seasoning before serving.

Things You'll Need

  • 1/3c Black olives, pitted
  • 1c Mushrooms, quartered
  • 1c Celery, sliced
  • 1 1/2c Tomatoes, diced
  • 1ea Red bell pepper, julienned
  • 1ea Yellow bell pepper, julienne
  • 2ea Green onions, sliced thinly
  • 1 1/2c Tofu, diced
  • 1ea Garlic clove, chopped
  • 1 1/2ts Oregano
  • 2tb Balsamic vinegar
  • 1/4c Olive oil
  • Salt & pepper, to taste
