Great Gazpacho Recipe

Step 1

Combine all ingredients and chill for 2 hours.

HINT: Out of time? Forget all the mincing and chopping. Cube the vegetables, then throw all of the ingredients into a blender or food processor and blend slowly until the vegetables are chunky and the soup is well blended.

Preparation time: 15-40 minutes Chilling time: 2 hours

Things You'll Need

  • 3c Vegetable or tomato juice
  • 1md Onion; minced
  • 2md Tomatoes; diced
  • 1 Green bell pepper; minced
  • 1 Garlic clove; crushed
  • 1md Cucumber; diced
  • 2tb Lemon juice
  • 2tb Red wine vinegar
  • 1ts Dried tarragon
  • 1ts Minced fresh basil
  • 1pn Ground cumin
  • 1ds Hot sauce
  • 2tb Olive oil
  • Salt and pepper; to taste
