Hearty Bean Soup Recipe

Overview

My favorite lunch recipe from a magazine.

Step 1

In a large saucepan, saute onions and garlic in oil, until tender. Add the tomatoes, carrots, celery, broth, and Worcestershire sauce. Bring to a boil.

Step 2

Reduce heat; cover and simmer 15 minutes. Stir in the beans, tomato paste, chili powder and pepper. Cover and simmer for 30 minutes, stirring occasionally.

Things You'll Need

  • 1 1-1/2 chopped onions
  • 1 4 garlic cloves, minced
  • 1 1 T. canola oil
  • 1 1 can (28 oz) diced tomatoes, drained
  • 1 3 large carrots, chopped
  • 1 3 celery ribs, chopped
  • 1 1-1/4 c. beef broth
  • 1 1 T. Worcestershire sauce
  • 1 1 can (16 oz) kidney beans, rinsed & drained
  • 1 1 can (15 oz) garbanzo beans, rinsed & drained
  • 1 1 can (15 oz) black beans, rinsed & drained
  • 1 1 can (6 oz) tomato paste
  • 1 1 T. chili powder
  • 1 1/4 t. pepper
