Rose's Broccoli Soup Recipe

Vegan Broccoli Soup

Step 1

Put about two quarts of water into a stock pot.

Step 2

Bring water to boil.

Step 3

Add chicken seasoning.

Step 4

First add carrots...then several minutes later add potatoes and onions.

Step 5

Puree cashews in about 2 cups of water

Step 6

Set timer for 10 minutes and add macaroni and broccoli.

Step 7

Taste the macaroni and make sure it is done....if it is add the cashews that have been very well pureedr.

Step 8

Add salt to taste.

Note: I often make this with cabbage instead of the broccoli, and sometimes I use vegitable both instead of water. You can just use salt instead of the chicken seasoning....and you can use a white sauce, using browned white flour, too. I guessed at the proportions to this recipe...as I never use one. Just play with this until it seems right to you! Rose

  • 2-3 carrots peeled and chopped
  • 2-3 potatoes peeled and diced
  • 1-2c. soy macaroni
  • 1 or 2 bunches of broccoli florets, divided and chopped into bite size pieces
  • 1/2c roasted cashews
  • 1 medium onion chopped
  • 2T. Vegan McKays Chicken seasoning
  • 1 Salt to taste
