Tofu Provincial Recipe


A very quick and simple dish.

Step 1

Heat a bit of oil in large skillet.

Step 2

Stir fry tofu until golden. Remove from pan and drain.

Step 3

Saute garlic and onions for about 5 mins.

Step 4

Add tomatoes, their juice and tomato paste, stir until blended.

Step 5

Return tofu to pan, add remaining ingredients and toss thoroughly.

Step 6

Cover and simmer 15 mins or until green beans are tender.

If sauce is too thin boil uncovered to reduce.

We LOVE this quick simple dish; sometimes I will substitute Zukes, or squash, or mushrooms for all or part of the tofu. Enjoy.

Things You'll Need

  • 1lb Firm tofu; patted dry-- and cut into 1/2 cubes
  • 1tbsp Tomato paste
  • 2cup Diced green beans
  • 3each Garlic cloves; minced
  • 1/2tsp Dried basil
  • 2medium Onions; chopped
  • 1/2tsp Dried oregano
  • 1can plum tomatoes w/juice -- (chopped) (35 oz )
  • 1medium Bay leaf
  • Pepper; to taste
